There's a certain stigma about eating habits in college and the infamous freshman 15. Some people don't care or simply don't need to worry because they have the metabolism of a bird. I am one of those unfortunate people not afforded that luxury, so I like to watch what I eat. I also enjoy eating healthy because it makes me feel so refreshed and wonderful!
Here are some of my favorite go-to recipes during the school year.
1. Honey Almond Granola
All you need are the ingredients, an oven and about 10-15 minutes of your time. Unless you're like me and not very skilled in the kitchen, then you may want to allow yourself maybe 30 minutes.
2. French Toast
Again, all you really need is toast, a couple of eggs and a stove. Although I still eat the frozen Aunt Jemima, I'd recommend a homemade version for guaranteed freshness.
3. Popcorn
I learned this trick from my mom, and I have to say, as an avid popcorn lover, it's fantastic! Not to mention, it's a lot healthier than the prepackaged buttery microwave packets. Take a brown paper bag and put about a 1/4 of a cup of popcorn kernels in it, then slightly fold the top and tape it. Put it in the microwave for about 3 minutes, though it usually takes about 2 or 2 1/2 for my microwave. If you want to add a little taste of butter, I opt for the Kernel Season's Butter Seasoning, which I get to stick with Pam, but only a little.
4. Ants on a log
This one is a throwback from my childhood that my mom used to make for me. You take celery and cut it up into little sticks, spread some peanut butter on top, and add some raisins for the "ants."
5. Ham roll ups
Yes, another throwback from my childhood. Thank you mom for instilling a base of healthy eating habits in me. Take a slice of deli ham, spread some cream cheese on it, and roll it up. You can also cut the rolls into four little sections and eat them with a toothpick. That's how I did it back in the good old days.
6. Veggie sticks and ranch dip
Take a 4-ounce container of plain greek yogurt and mix a pack of your favorite dip flavoring, such as ranch or onion dip. Cut up some celery sticks, carrots or whatever kinds of vegetables you like. Dip and enjoy!
7. Edamame or any steamed vegetables
Put them in a microwavable safe bowl, add a little water for some moisture and cook them for about 3-5 minutes.
8. Lemon and Garlic Broccoli
Microwave the broccoli in a bowl with some water then mix the lemon and garlic mixture into it. Let it cool for a minute or so, and then bam, you've got a delicious and healthy vegetable dish.
