Who else doesn't have any time in the morning to make breakfast?! I am constantly in a rush in the morning and I definitely do not have the time to prepare a healthy breakfast. While I could just grab a granola bar or cup of yogurt those just do not pass as a nutritious, wholesome breakfast for me.

So what is the solution? The answer is overnight oats!!! This grab-and-go breakfast has made my mornings a little less hectic and a lot more delicious.

These oats only take 5 minutes to prep at night and then a minute to assemble in the morning. Even better they are healthy, hearty, and delicious. All you have to do is let the oats steep overnight and work their magic, and then in the morning, you have a delicious nutritious breakfast waiting for you. Then you just need to grab your oats in the morning from the fridge and head out the door.

I love starting my mornings with these overnight oats, and you will too! So below is the recipe. I promise that spending the extra time at night to make these will make your mornings run smoother and will save you some extra minutes to use on something else.

Recipe:

Ingredients:

1 pack of oats

2/3 cup almond milk

1/2 banana

2 tbsp yogurt

1 tbs peanut butter

Handful of blackberries

Handful of mixed nuts or granola

Cinnamon

Honey

Directions:

1) Put the oat packet into a mason jar, then cut your banana in half, and slice half of the banana in small pieces and put the slices into the mason jar

2) Cover the oats & banana slices with almond milk and stir until everything is mixed well

3) Add 2 tbsp yogurt, a handful of blackberries, 1 tbs peanut butter, a handful of mixed nuts or granola, cinnamon, honey, and whatever else your heart desires!

4) Put the oats in the fridge to steep overnight

5) The next morning, grab your hearty, delicious, and satisfying oats out of the fridge and you are off to a delicious start to your day!

Ever since I could remember, it was a treat to receive Easter Bread made by my grandmother. We would only have it once a year and the wait was excruciating. Now that my grandmother has gotten older, she has stopped baking a lot of her recipes that require a lot of hand usage--her traditional Italian baking means no machines. So for the past few years, I have missed enjoying my Easter Bread.

I was asked so many times why I wanted to go to a small school when a big university is so much better. Don't get me wrong, I'm sure a big university is great but I absolutely love going to a small school. I know that I miss out on big sporting events and having people actually know where it is. I can't even count how many times I've been asked where it is and I know they won't know so I just say "somewhere in the middle of Wisconsin." But, I get to know most people at my school and I know my professors very well. Not to mention, being able to walk to the other side of campus in 5 minutes at a casual walking pace. I am so happy I made the decision to go to school where I did. I love my school and these are just a few reasons why.
