If you've already read my last article of food essentials every college student should have, then you know I'm on that thrill of choosing what foods I'm going to have in my pantry for next year. Since I'm going to live in my own apartment next year, I'm already trying to think of food ideas to implement in my diet for next year, especially breakfasts. Breakfast is a personal favorite of mine; there are so many variations to it, but so little time to implement it. This semester (and my whole life honestly) I've struggled with eating breakfast in the morning, which usually was not the foods I wanted to eat (since I went for the conventional foods like cereal or a nutritional bar), something that'll hopefully change next semester, especially on weekdays where I'm the busiest.
Below are 7 quick breakfast ideas that you can implement in your morning, some taking a few minutes of preparation the night before and some taking less than 10 minutes.
1. Overnight Oats
A very quick breakfast food where you can prepare steel cut oats with water, let it sit in your fridge overnight and top with fresh berries and seeds in the morning.
2. Chia Pudding
Very similar in preparation as the overnight oats, just let a few tablespoons of chia seeds soak overnight, add a minute of vanilla, cocoa powder, or matcha powder into the mix and eat with another serving of fresh fruit and seeds
3. Smoothie
You could easily put this in your weekly meal prep routine; just cut some fresh fruit, make some fruit combos and place in a Ziploc bag to freeze. Some smoothie combos include:
- all green smoothie with some bits of fruit (pineapple, strawberries, etc)
- an all berry smoothie (strawberries, raspberries, blueberries, etc.)
- a one fruit smoothie (all mango, banana, strawberries, etc.)
4. Sliced fruit
Possibly the easiest idea on this last that only requires you to get familiar with your knife skills.
5. Toast with literally anything
And I mean literally anything. Nutella (although not as healthy but who's going to stop you?), avocado (with a little egg on top if you have time), peanut butter, jam, etc.
6. Granola with yogurt
There's this great video of how to make homemade granola, but if you're okay with not being extra, you can easily buy ready-made granola at the grocery and eat with some yogurt and fresh fruit.
7. Banana pancakes
This is the most time-consuming food idea (and probably overused since most youtube videos about this topic list this food idea) but honestly, it could take under 15 minutes. Just mush an overripe banana, add an egg (and some oatmeal, but optional), throughly mix and then place on a sprayed skillet.
