Eating vegetarian can be more difficult then most people think, and when I tried to find recipes or ideas online, everything included 52 different ingredients, 30 different steps and ends up taking multiple hours. However, eating vegetarian can be easy whether you are trying to cook a meal at home or need something you can throw in the microwave quickly as you are heading out the door. I've assembled a list of some of the easy recipes and quick meals I have found and put them together in one place.
1. Tomato, Basil and Mozzarella Pasta
My friend Maddy introduced me to one of my absolute favorite recipes, and it is a super delicious and vegetarian. All you have to do is boil the noodles of your choice and add diced up tomatoes, fresh basil and fresh mozzarella. If you wish, you can add pieces of avocado, though I prefer it without. After this, throw a little salt, pepper and Italian seasoning on top and drizzle with olive oil and a little bit of balsamic vinegar. Super delicious and easy.
2. Rice and Beans
As a vegetarian, it can be hard to get enough protein, but eating beans is a great way to get it. Throw them on some rice and you have a meal! My favorite combination is yellow rice and black beans with a little sour cream on top and some pieces of fresh Cuban bread on the side. Red beans and rice is also a delicious combination.
3. Bean and Cheese Quesadillas
Yummy quesadillas are super easy to make. Get a big tortilla and fill half with vegetarian refried beans and shredded Monterey Jack cheese. You can also add dried or fresh cilantro. Fold it in half and spray a pan with oil and cook it on medium long enough on each side of the tortilla to get crispy and the cheese to get melty. Once it's done, throw some sour cream, black beans and salsa on top.
4. Salad
I really love salad, but they can tend to leave you hungry if there is no meat on them, so my mom found a solution to the problem. Throw some black beans on the salad and add taco seasoning to the ranch to make a southwestern styled salad. Adding corn, peppers, tomatoes, cilantro and tortilla strips can make it extra good.
5. Veggie Burger and Baked Beans
Morning Star veggie burgers are delicious and easy to make by throwing them in the microwave or the oven. Add anything you would to a normal burger and pair with a side of baked beans. Use Bush's vegetarian baked beans and add Sweet Baby Ray's barbecue sauce, sugar and onions to taste, and throw them in the oven for an hour at 350.
6. Frozen meals
Frozen meals are quick, easy and can be delicious. Brands like Morning Star and Quorn make great tasting food that you can warm up in an oven or microwave. I like the veggie corn dogs and chik'n nuggets.
