I love having time to myself to reflect on my life, and the things I am thankful for.

It's the beginning of November and I have reached the point in the semester where things are so stressful, and I can barely get through the day without a nap, and a few cups of coffee.

School work is piling up faster than I can even keep track of. Papers, group projects, observations, it never ends. The one thing pulling me through this crazy point in the semester is that fact that Thanksgiving break is right around the corner.

I love the holidays, and I am so excited for Thanksgiving this year because....

1. Break!! No School For 6 Whole Days!

I love school but I am so excited to be able to say "Peace out, Fort Myers." I am going home! Granted, I will still probably have homework, because these professors show no mercy and I have to study for a huge teaching exam. But I am just glad I will be able to head back to my hometown and get away from school for a few days. A change in environment is always nice, even if there is still homework to be done. I have been home a lot this November but I love being at home so that doesn't bother me.

2. I Get To Go On Vacation

This year I decided to go to Oregon during my Thanksgiving break. I was supposed to go over the summer, but because of a surgery I had to have I sadly had to cancel that trip. I am so glad I have the opportunity to go this month. I will be able to see family, and one of my close friends that I haven't been able to see in a few years. Plus, I will be in a completely different area, so I will actually get to experience a little bit of some winter weather! I am so excited, and I hope it snows haha.

3. Home Cooked Thanksgiving Meals

Although I have an apartment at school and cook meals for myself every day, nothing beats Thanksgiving food. All I eat at school is chicken and pork so I am excited to be able to change my diet for a few days and enjoy some amazing food. Not having to eat chicken for 5 days? I'll take it!

4. I Get To See Family I Don't See Often

I will be out of town for the actual holiday, but I am excited to get to see my younger cousins who I don't see often because of school. I love being able to spend time with my family, and I know break will be the perfect opportunity for me to see everyone. Even if it is only for a short visit.

5. I Will Have The Chance To Sit Back And Reflect On The Blessings In My Life

This is so important to me, and very fitting for the thanksgiving holiday. I love having time to myself to reflect on my life, and the things I am thankful for. I always try to write down a few things that I am thankful for everyday, but often times I don't have time so I just make a mental note. It is refreshing to remember the things that serve as blessings in life. Friends, family, and my relationship with God are all things I am thankful for now, and will be thankful for forever.

Small towns certainly have their pros and cons. Many people who grow up in small towns find themselves counting the days until they get to escape their roots and plant new ones in bigger, "better" places. And that's fine. I'd be lying if I said I hadn't thought those same thoughts before too. We all have, but they say it's important to remember where you came from. When I think about where I come from, I can't help having an overwhelming feeling of gratitude for my roots. Being from a small town has taught me so many important lessons that I will carry with me for the rest of my life.

I can't say "thank you" enough to express how grateful I am for you coming into my life. You have made such a huge impact on my life. I would not be the person I am today without you and I know that you will keep inspiring me to become an even better version of myself.

Course registration at college can be a big hassle and is almost never talked about. Classes you want to take fill up before you get a chance to register. You might change your mind about a class you want to take and must struggle to find another class to fit in the same time period. You also have to make sure no classes clash by time. Like I said, it's a big hassle.

This semester, I was waitlisted for two classes. Most people in this situation, especially first years, freak out because they don't know what to do. Here is what you should do when this happens.

Challah vs. Easter Bread: A Delicious Dilemma

Is there really such a difference in Challah bread or Easter Bread?

Ever since I could remember, it was a treat to receive Easter Bread made by my grandmother. We would only have it once a year and the wait was excruciating. Now that my grandmother has gotten older, she has stopped baking a lot of her recipes that require a lot of hand usage--her traditional Italian baking means no machines. So for the past few years, I have missed enjoying my Easter Bread.
