I am very much a dessert person (a name that Claire Saffitz likes to call herself - and her cookbook too). But often, I don't have the time to create entire cakes, cookies, or crumbles, and especially not during a semester. So when there's times I really feel like baking something (and eating something delicious), I'll whip up some mini cakes and cookies - in microwaved form of course. Don't get me wrong, these are no replacements for the oven-baked versions. But they are great for a dessert that comes together in a quick pinch.

Small towns certainly have their pros and cons. Many people who grow up in small towns find themselves counting the days until they get to escape their roots and plant new ones in bigger, "better" places. And that's fine. I'd be lying if I said I hadn't thought those same thoughts before too. We all have, but they say it's important to remember where you came from.
