If you are vegetarian and living away at college, you know the struggle of the dining hall.
There’s not many options and the few meals that you can eat get old within your first semester. Out of frustration, I decided to start making more meals for myself. Through some trial and error, I have come up with some foods that are quick and easy to make, and they all can be made in the microwave. Here are my top five:
1. Ramen with Mixed Frozen Vegetables
-Ingredients: Ramen Noodles (without the flavor packet)
Frozen Peas, Carrots, Broccoli (or whatever else you like)
Sriracha Sauce
Lemon Juice
Recipe: Microwave the noodles and veggies separately and add your sauces afterwards.
2. Brioche Toasts With Avocado and Tomato
I usually prefer regular toast, but toasters are often not allowed in dorms. Brioche toasts can be bought in the cracker aisle and are a good alternative.
Ingredients: Brioche toasts
Ripe Avocado
Baby Tomatoes
Honey (optional)
Goat Cheese (optional)
Recipe: Spread the avocado evenly on each toast. Then, cut the baby tomatoes in half and place them on top of the spread avocado. A drizzle of honey and a sprinkle of goat cheese are optional.
3. Rice, Beans, and Tomato Bowls
Ingredients: Pre-cooked Minute Maid Rice
Canned Black Beans
Diced Tomato
Spice of your choice
4. Pre-Cooked Pasta and Marinara Sauce
Barilla makes bags of pre-cooked pasta. Just pop it in the microwave with some sauce for a few minutes.

Ragu Marinara Sauce
5. Vegetarian Tacos
Ingredients: Hard Taco Shells
Black olives
Sour Cream
Shredded Lettuce
Canned Beans
Shredded Cheese
Salsa
