I'm always searching for easy recipes that are both healthy and still taste delicious. I' sometimes skeptical of how delicious a recipe I find is going to really be, and I know many other people are the same way. So I decided to share three of my favorite newly-found recipes:



1. Peanut Butter Protein Bars

These are NO BAKE! Plus they're peanut butter which I'm always obsessed with anything that tastes like peanut butter.

What you need:

1 cup peanut butter

3/4 cup honey

3 cups oats

1 glass pan, any size but 9x13 preferred

Stir peanut butter and honey over low heat until they're a liquid consistency, then slowly stir in oats. Pour into the pan and let it sit overnight.


2. Oatmeal Raisin Cookies

This one is super easy!

What you'll need:

2 ripe mashed bananas

1 3/4 cup of oats

1/4 cup of raisins (or dark chocolate chips)

1 cookie sheet - greased, or with aluminum foil

Add the oats, bananas, and raisins/chocolate chips into a bowl and mix. Roll them into small balls and place them on the cookie sheet. Bake at 350 for 15-20min or until golden brown.



3. Banana Ice Cream

Yes you heard me correctly, banana ice cream. Completely lactose/dairy free and only needs one ingredient (although you can add more).

Step one: cut at least one banana into small chip sizes, put in air tight container and freeze over night - you can also just freeze the banana whole but it makes the next step a lot harder.

Step two: put the banana in a food processor - you can also use a blender as long as it's powerful enough to crush the frozen banana. Keep blending the banana until it becomes a mushy consistency. You may have to stop blending a few times to push the banana down.

Step three: you can either eat it once it's been blended, or preferably you put it back in an airtight container and freeze it overnight so it has more of an ice cream consistency.

You can also try adding these items when you're blending the banana for more flavor:

Nutella

Cocoa powder

Strawberries

Sweetened condensed milk and cinnamon

Peanut butter

Honey

Chocolate chips

Almonds

Cookie butter

Cinnamon

Cardamom

Ginger

Or just experiment with something.

Many people who grow up in small towns find themselves counting the days until they get to escape their roots and plant new ones in bigger, "better" places. And that's fine. I'd be lying if I said I hadn't thought those same thoughts before too. We all have, but they say it's important to remember where you came from. When I think about where I come from, I can't help having an overwhelming feeling of gratitude for my roots. Being from a small town has taught me so many important lessons that I will carry with me for the rest of my life.

Ever since I could remember, it was a treat to receive Easter Bread made by my grandmother. We would only have it once a year and the wait was excruciating. Now that my grandmother has gotten older, she has stopped baking a lot of her recipes that require a lot of hand usage--her traditional Italian baking means no machines.
