5 Quick & Easy Recipes You Can Make In College That AREN'T Ramen

Every week before I go food shopping, I find myself on Pinterest trying to find quick and easy new recipes to try. Between classes and extracurricular and never-ending need for more sleep, college students don’t have an excess amount of time to make food.

However, just because you don’t have a lot of time does not mean you should be eating ramen and cereal for dinner every night. Honestly, prepping a delicious dinner could often take less than 10 minutes.

1. Chicken Chili in the Crockpot

1 lb. of ground chicken

1 can of diced tomatoes

1 can of kidney beans

1 tsp of salt

1 tsp of chili powder

1 tsp of cumin

(Optional: rice and shredded cheese)

Steps:

  1. Cook the chicken on the stove
  2. Put the chicken into the crockpot
  3. Drain the diced tomatoes and kidney beans pour on top of the chicken
  4. Sprinkle the spices over the chicken
  5. Stir and mix everything together
  6. Cook on low for 8 hours
  7. Serve on top of rice and sprinkle with shredded cheese

2. Baked Ziti

1 lb. of ziti pasta

Tomato sauce

Ricotta cheese

Mozzarella cheese

Parmesan cheese

Steps:

  1. Cook the pasta
  2. Pour into a large baking pan
  3. Mix in tomato sauce and ricotta cheese
  4. Put a layer of sauce on top
  5. Put a layer of shredded mozzarella cheese
  6. Sprinkle some parmesan cheese on top
  7. Cook in the oven at 350 degrees for 30-45 minutes or until the top is golden brown

3. Flatbread Pizza

One package of pizza dough

Garlic

3-4 tbsp of olive oil

1 cup of roasted red peppers

1 cup of spinach

¼ cup of feta cheese

Steps:

  1. Bake the pizza dough in the oven at 350 degrees for about 15-20 minutes
  2. Using the garlic and 2 tbsp of olive oil, cook the roasted red pepper and the spinach on the stovetop
  3. Spread a layer of olive oil on top of the cooked pizza dough
  4. Spread the spinach and roasted red pepper on top of the pizza dough
  5. Sprinkle with feta cheese
  6. Bake in the oven for about 5 minutes

4. Taco Chicken in the Crockpot

4 uncooked chicken breasts

1 cup of corn

1 can of black beans

½ package of taco seasoning

1 jar of salsa

Shredded cheese

Rice

Steps:

  1. Put the chicken breasts into the crockpot
  2. Sprinkle the taco seasoning on top of the chicken breasts
  3. Pour the salsa over that
  4. Put in the corn and black beans
  5. Cook in the crockpot on low for 8 hours
  6. Shred the chicken and serve on a bed of rice
  7. Sprinkle shredded cheese on top

5. Sausage and Peppers

Package of your favorite uncooked sausages

2 potatoes

2 onions

3-4 peppers

Package of sliced mushrooms

Bag of baby carrots

Olive oil

Salt

Pepper

Onion Powder

Steps:

  1. Using a large baking pan, place the uncooked sausages in
  2. Slice up the two potatoes and toss those in
  3. Slice the two onions thinly and put them into the pan
  4. Core the peppers and slice them up and put them into the pan
  5. Pour in the sliced mushrooms and baby carrots
  6. Sprinkle olive oil over the contents of the pan
  7. Sprinkle the salt, pepper, and onion powder to your liking
  8. Cook in the oven at 425 degrees for about one hour

I was asked so many times why I wanted to go to a small school when a big university is so much better. Don't get me wrong, I'm sure a big university is great but I absolutely love going to a small school. I know that I miss out on big sporting events and having people actually know where it is. I can't even count how many times I've been asked where it is and I know they won't know so I just say "somewhere in the middle of Wisconsin." But, I get to know most people at my school and I know my professors very well. Not to mention, being able to walk to the other side of campus in 5 minutes at a casual walking pace. I am so happy I made the decision to go to school where I did. I love my school and these are just a few reasons why.
