November may be well known for the traditional food-eating holiday, Thanksgiving, but it has an even more wonderful food-related holiday.

November is Peanut Butter Lover’s month!!

So, let’s all be festive and celebrate this wonderful holiday! Below are some delicious (and healthy) ways to enjoy this American staple.

1. Homemade Peanut Butter Cups

Oh, yes, this is a thing. Using a mini muffin tin, melt some dark chocolate and mix with a little coconut oil for smoothness. Pour a bit into the bottom of your muffin tin and top with a dollop of peanut butter. Cover with another layer of chocolate and then leave in the fridge or freezer to harden.

2. Ants on a Log

This is a pretty well-known one, but if you haven’t tried it, now’s the day to do it. Slather some celery with peanut butter and top with raisins. A delicious and fun snack for kids and adults.

Feeling fancy? Try different kinds of dried fruit, or sub the peanut butter for cream cheese (because even though it’s peanut butter lover’s month, there’s never a bad time to enjoy some cream cheese).

3. Energy Bites

Peanut butter can be a great binder to hold together other healthy ingredients, and energy balls are a great way to give you a kick-start in the morning, or during long afternoons at work or school. Simply combine peanut butter, oats, dates, and whatever else you like (I like chia seeds and chocolate chips). Roll the mixture into balls and ta-da! A healthy little pick-me-up.

4. Peanut Butter Banana Pancakes

This is a great, protein-filled recipe for breakfast. Combine 2 eggs, 1 banana, a dollop of peanut butter, and a pinch of cinnamon in a food processor. Cook in a lightly-oiled pan on the stove. This makes a TON of little pancakes, so be ready with a big appetite.

5. Peanut Butter Fruit Dip

Need something healthy to dip your fruit in? Combine plain or vanilla Greek yogurt with a little honey and peanut butter, and you have a sweet little dip to make eating fruit even more fun.

6. Peanut Butter Banana Ice Cream

I absolutely adore “nice” cream. It’s delicious, creamy, and a great low-fat low-sugar substitute for ice cream. Simply blend up a banana with a little vanilla extract, cinnamon, and peanut butter and then stick it in the freezer. Be sure to take it out for a few minutes to thaw before digging into this delectable treat.

7. Chocolate Peanut Butter Banana Smoothie

This is a great on-the-go option. Combine 1 tablespoon each of peanut butter and cocoa powder with ½ a banana and 1 cup of milk. Add protein powder if desired and blend it up with some ice in a food processor. Delicious and easy.

8. Peanut Sauce

Want to add a little Asian flair to your dinner? Try making a simple peanut sauce by combining peanut butter, soy sauce, honey, Worcestershire sauce, ginger, garlic, lime juice, and red pepper flakes for a little heat. There’s a great recipe at addapinch.com.

9. Sweet Potato Breakfast

Looking for a new, sweet way to eat November’s favorite carb? Try it for breakfast with a little peanut butter, honey, and some fresh fruit.

10. Peanut Butter & Jelly Oatmeal

For a healthy breakfast that reminds you of your favorite childhood sandwich, add a little peanut butter and jelly to your oats. Such a sweet way to start your day!

I was asked so many times why I wanted to go to a small school when a big university is so much better.
