Where are you, Chipotle?

Where are you, Chipotle?

At the beginning of last year, rumors started circling that there was a Chipotle coming to Greenville. Now, almost a year later, there is still no sign of the delicious Mexican restaurant among us ECU students. Coming back to school and finding out that Chipotle is STILL not here is a major disappointment to say the least.

I know that I am not the only one who is extremely anxious for it’s arrival and here’s why:

1) Guacamole lovers unite: A lot of the other Mexican restaurants similar to Chipotle appeal more to the people who are a fan of “queso” which is a cheese dip. Chipotle on the other hand, offers guacamole as a side and could appeal to a whole lot more customers who would prefer guacamole to queso.

2) Devoted and hungry customers: It seems as though Chipotle has a wide range of devoted customers who prefer its food to any other restaurant that is similar. Chipotle has a lot of diehard fans that would make it one of the most popular places to eat if it comes to Greenville.

3) You can never have too many options for places to eat: Although Greenville has a ton of places to eat, whenever my friends and me are hungry we can never choose where we want to go. Having a Chipotle in Greenville would make that choice a whole lot easier.

4) It will benefit Greenville as a whole, not just the people eating it: Having a Chipotle in Greenville will make the city more desirable and a better place in general. Based on the popularity of Chipotle, I'm sure a lot more people would want to come and visit/live here! So this is a win/win situation for Chipotle, Greenville, and everyone who lives here.

5) Happiness for everyone: Overall, Chipotle would be an amazing asset to Greenville and would be sure to satisfy a lot of peoples burrito/bowl needs. Queso lovers can go to Moe’s while guacamole lovers go to Chipotle, which means peace and happiness for all.

Greenville needs a Chipotle to bring more people and variety to the city. It will make for a perfect balance of happiness and filling hungry stomachs. So let’s all cross our fingers and hope that we don’t have to wait much longer for this awesome establishment to grace our presence!

Small towns certainly have their pros and cons. Many people who grow up in small towns find themselves counting the days until they get to escape their roots and plant new ones in bigger, "better" places. And that's fine. I'd be lying if I said I hadn't thought those same thoughts before too. We all have, but they say it's important to remember where you came from. When I think about where I come from, I can't help having an overwhelming feeling of gratitude for my roots. Being from a small town has taught me so many important lessons that I will carry with me for the rest of my life.

I can't say "thank you" enough to express how grateful I am for you coming into my life. You have made such a huge impact on my life. I would not be the person I am today without you and I know that you will keep inspiring me to become an even better version of myself.

Course registration at college can be a big hassle and is almost never talked about. Classes you want to take fill up before you get a chance to register. You might change your mind about a class you want to take and must struggle to find another class to fit in the same time period. You also have to make sure no classes clash by time. Like I said, it's a big hassle.

This semester, I was waitlisted for two classes. Most people in this situation, especially first years, freak out because they don't know what to do. Here is what you should do when this happens.

Challah vs. Easter Bread: A Delicious Dilemma

Is there really such a difference in Challah bread or Easter Bread?

Ever since I could remember, it was a treat to receive Easter Bread made by my grandmother. We would only have it once a year and the wait was excruciating. Now that my grandmother has gotten older, she has stopped baking a lot of her recipes that require a lot of hand usage--her traditional Italian baking means no machines. So for the past few years, I have missed enjoying my Easter Bread.
