Kale has come to be known as the Kim Kardashian of foods—you see it and hear about it everywhere, and you wonder, “What’s the big deal?” Well, it’s a pretty big deal.
If you know me well, you know my obsession of kale. Don’t dare speak of kale around me or I’ll begin my profound claims for my love of this vegetable. It’s become a staple in my everyday diet, and it should become one in yours too. Hey, if Gwyneth Paltrow can do it, so can you.
Kale is a super food—it’s a strong antioxidant, lowers cholesterol and is even said to help prevent cancer. If that’s not enough for you, there’s more.
This super food alone has 3 grams of protein, fiber, vitamins A, C, and K, omega-3's, lutein and zeaxanthin. If you’re a vegetarian, protein sources are tough to pick and choose—tofu may not be for you and beans don’t make the cut. Therefore this is a good complimentary green to have with your meals, adds a little protein, and keeps you full. The two complicated words mentioned, lutein and zeaxanthin, fight against retina degeneration and cataracs. These are things to start working on now, before it is ever a concern in your older years.

The idea is to breakdown the cellulose, and in doing so the leaves become easier to eat and sweater.
